Let me help you feel better with this recipe using SVTFarm’s REAL sustainable farm-fresh beef.
Busy Mom’s Sheet-pan Meatloaf with Mushrooms and Smashed Squash
Preheat oven to 375F
Place silicone baking mat on sheet pan. Set aside.
Gather for Meatloaf:
¾ cup bread crumbs or toasted gluten-free bread- no crusts
¼ cup milk or water
1 egg beaten
2 cloves SVTFarm garlic minced
½ cup tomato sauce or ketchup
2# SVTFarm ground beef, lamb, or mutton
1 ½ tbsp Worcestershire sauce
Salt and Pepper
Mix the meatloaf in a large bowl until combined. Do not overwork it.
Form into a rectangle on the baking mat.
Bake for 30 minutes until meat thermometer reads 105-115F
Gather for Vegetables:
1 jar Overstory Farm dried mushrooms reconstituted in water
3 tbsp soft butter
1 Dutchess Farm Butternut Squash, peeled and cubed, seeds removed
Salt and Pepper
Toss mushrooms and squash with butter salt and pepper.
Add to sheet-pan meatloaf and cook until squash is tender and meatloaf temperature reads 125-135F; about 20 minutes.
